Asparagus with Orange-Chili Butter

“This would be splendid with a steak, duck, or grilled salmon. Yes, I know it’s three servings; that’s because asparagus is sold in pounds. Just save a serving to warm up tomorrow night.” ~Dana Carpender

Recipe:

Servings: 3

Ingredients:

  • 1 lb asparagus
  • 3 Tbsp butter
  • 1 Tbsp lemon juice
  • 1 tsp splenda *
  • 1 tsp chili paste
  • 1/4 tsp orange extract
  • 1 Tbsp cilantro fresh, minced- optional

Instructions:

Snap the ends off of your asparagus where they want to break naturally. Steam until tender-crisp — I give mine 5-6 minutes on high in my microwave steamer.
In the meanwhile, over low heat in a small saucepan, melt the butter. Whisk in the lemon juice, Splenda, chili-garlic paste, and orange extract. Mince the cilantro if using.
When the asparagus is tender-crisp, uncover the steamer immediately, to stop the cooking. Drain it well, and toss with the sauce. Serve with the cilantro sprinkled on top.

*In place of the Splenda, you can use liquid stevia to equal 1 teaspoon sugar in sweetness.

    This sounds wonderful and am thinking perhaps a little orange zest might be good along with the cilantro
