Herbert D. Focken’s Sweetened Jalapeño Bites

Herbert D. Focken sent in this idea for 500 More Low-Carb Recipes, and I’ve been in love with it ever since. But for 500 Ketogenic RecipesI thought it was time to create an updated version, using today’s more popular sweeteners. Whichever sweetener you use, check their website for the sweetness equivalence. You can just add it to taste, but be careful. It’s easy to add more, but impossible to remove too much.


Servings: Varies


  • 12 ounces jar sliced jalapeño peppers
  • plain liquid stevia extract or liquid monk fruit or liquid sucralose to equal 3/4 cup sugar in sweetness
  • whipped cream cheese
  • pork rinds


This could not be simpler! Open your jar of jalapeños. Add the sweetener. Put the lid back on tightly and shake it up. Stick it in the fridge for a few days.

When snack time rolls around, grab your sweetened jalapeño, a bag of pork rinds, and a tub of whipped cream cheese. Spread cream cheese on a pork rind. Put a few slices of jalapeno on it. Stuff it in your face. Repeat.

Recipe Notes:

It is impossible to analyze per-slice or per-serving. The entire jar of jalapeño will have 16 grams of carb– 9 of those fiber – for a net carb count of 7 grams for the whole darned jar.
