Low-Carb Egg Custard Pie

Rich, creamy, and satisfying. I’m so glad I came across this low-carb dessert on Tracy’s Low-Carb Journey.

Recipe:

Servings: 8

Ingredients:

  • 3 eggs
  • 2 cups heavy cream
  • 3/4 cup granulated Splenda
  • 1 Tbsp. vanilla
  • 1/2 tsp. salt
  • sprinkle of nutmeg and/or cinnamon

Instructions:

Preheat oven to 425°.  Mix eggs in bowl until foamy.  Add Splenda, cream, salt and vanilla.  Mix well.  Spray a glass pie plate with PAM then pour the custard in the pie plate.  Sprinkle nutmeg on top of pie.  Put pie on the top rack of the oven, also add a cake pan of water to the bottom rack of the oven – this helps the custard stay moist and fluffy.  Cook pie at 425° for 10 minutes, then reduce oven to 325° and cook another 30 minutes.  Pie is done when a knife inserted comes out clean.  Let cool and and enjoy!!

Recipe Notes:

Yield: 8 servings, each with: 24g Fat; 4g Protein; 2g carbohydrates

The number of servings one should eat in a sitting will depend upon your daily carbohydrate limit.

    I made this tonight in ramekins (added some unsweetened shredded coconut). I struggled getting it cooked all the way through. Should I have modified the temperature cooking it in ramekins? I ended up pulling them out of the oven finally, after over an hour after the top was starting to brown too much, and cooked the remainder of the egg liquid in the microwave. It was delicious! But would love to figure out the oven cooking.

    I made this and it is delicious! No crust needed at all. I have added to my Christmas dinner so I can have a little something while my family enjoys our traditional chocolate cake. 5 Stars!

    I have used Splenda, Monk Fruit, and Swerve and prefer Swerve the Best.
    I tried it in single serve cups, but I had a pan of water in the oven, which is what I usually use with the Pie pan. I’ll try the water bath for the cups by Anchor Hocking, which even have lids. Love this which eat for dessert and breakfast alot of days.

    I will be using swerve as my sweetener
    I will be using 1 cup dessert cups, in a water bath, not a pie dish ( to easy to eat the whole thing!!! lol)
