People want something other than eggs for breakfast, you say? Try this – Power Pack Mocha. It tastes like upscale, grownup cocoa. If you like, make this the night before, pour it into your car cup, and refrigerate, then microwave on the way out the door — if your lid is good and tight, you might give it a quick shake after heating, but be careful. You don’t want to need to go back and change!
Servings: 1 8 oz cup
- 1 cup coffee fresh brewed, hot
- 1 ½ Tbsp butter unsalted, grass-fed
- 1 ½ Tbsp coconut oil
- 1/4 tsp stevia liquid extract, chocolate flavor*
- 2 tsp cocoa powder, unsweetened
- 2 Tbsp whey protein powder, chocolate or vanilla flavor**
- Assemble everything in your blender and blend until the butter and coconut oil are worked in, and the whole thing is frothy. Pour into a car cup and run!
Yield: 1 serving, with: 40g Fat; 23g Protein; 5g Carbohydrate
The number of servings one should eat in a sitting will depend upon your daily carbohydrate limit.
* I buy SweetLeaf and NOW brands of liquid Stevia, both of which run about 6 drops = 1 teaspoon sugar in sweetness. The price may make you think twice, but a bottle lasts a long time. If you buy a different brand, be sure you know the sweetness equivalence – often it’s on the label, but you may have to check the company’s website.
** Whey protein powder is widely available at health food stores and GNC stores, but it’s cheaper online. I get mine at Vitacost.com. I have never had a brand of whey protein that ruined a recipe, so shop for price.
