America, along with the rest of the world, has maintained a love affair with pasta. Unfortunately, if you’re an individual with diabetes or simply watching your weight, traditional Italian-style pasta is a love you cannot afford. Asian rice noodles, ramen, and soba as well, are all off-limits due to their high carbohydrate content. Fortunately, there are shirataki noodles, which are truly low in carbs. 16 ounces tofu shirataki alfredo noodles (or other style) (2 packages)
3 Tbsp butter (a large pat)
6 Tbsp whipped cream cheese (a very large dollop)
4 Tbsp grated Parmesan cheese (3 spoonfulls)
1 clove garlic crushed
In a small sauce pan, combine butter, cream cheese, parmesan cheese, and crushed garlic. Stir constantly over medium heat until melted and creamy (just a few minutes). Remove from heat, or keep on a very low heat, while preparing the noodles.
Open package of shirataki noodle into a colander. Rinse noodles well and put them in a microwaveable bowl.
Microwave on high for 2-3 minutes, then drain again.
Put them back in the bowl and nuke them for another 2-3 minutes, and drain them one more time. *These repeated steps are important, as your noodles will ooze lots of water into your sauce, diluting it. I would even suggest taking a paper towel and patting them dry, though be careful not to burn yourself.
Transfer noodles to a serving plate. Top with hot, melted alfredo sauce, then with an extra sprinkle of grated parmesan cheese, and serve!
